5-Step Tutorial About How to Write on a Cake

You’ve seen those mesmerizing viral videos on social media several times, and boy, do they make knowing how to write on a cake seem pretty easy. But, just like any artistic endeavor, learning how to write on a cake entails a bit of practice and some discipline.

Even a seasoned calligrapher needs to get used to the medium of cake writing because that piping bag produces icing with a density and consistency that’s a lot heavier than ink. It also has a different grip and tactile touch compared to that of a pen. So it somehow requires you to be extra careful to avoid failed writing.

Learning how to write on a cake may prove to be trickier than it seems — it certainly ain’t a piece of cake! But don’t fret. All you need is to practice, practice, practice. You will eventually get the hang of it. Who knows, the next thing you’ll do it, you’re like writing your name on paper.

5 Easy Steps Tutorial: How to Write on a Cake

You don’t have to wait until the last minute to start practicing your piping skills. The earlier and longer you practice, the less pressure you’ll feel. Picture practicing how to write on a cake as similar to doing calligraphy exercises.

1. Pick the Font Type to Write on Your Cake

The first thing you need to do is to find a good reference to work with. There are thousands of fonts you can choose from, but pick one that you are most comfortable and confident to execute.

If you’re making the cake, you probably already have a good idea of the dimensions of the cake as well as the other decorative elements that you will be putting in along with your cake writing. This will help you figure out the font size and other details like spacing or kerning (the space between letters).

As a beginner, it’s advisable that you pick a cursive font rather than a black one. Why? Because block letters require better control over the flow and stop of icing . So you need to be extra intricate about the details.

When you’ve chosen the font to use, it will become easier for you to visualize how to write on a cake — start imagining the strokes and how to go about them.

2. Make a Template

Make a sketch of the cake, as you visualize it, including your writing and the other decorative elements that will go on the cake’s surface. This way, you will be able to apply the right size and proportion for your cake writing.

It’s even better if you know how to use graphics software (like Adobe Illustrator or other software with shapes and measurement units) because you’ll be able to layout the exact circumference of your working surface and do an outline of all the decorative elements. You can also customize the font size accordingly — plus, you can print it out as your template!

Nothing can be more exact than a measured template. You can also use this template as your reference when you do the actual piping, so the chances of making mistakes will be lower.

For example, if you’re working on a round cake with a circumference of about 8 inches and you want the “Happy Birthday, (Name)!” at the center of the cake, you can probably work with a 73-point to an 84-point-sized cursive font. Proportions vary, especially if the name of the birthday celebrant is lengthy. Also, it’s important that you select an empty cake with a large space to write on if the name is longer.

3. Start Piping

After you’ve printed out your template, take some parchment paper and cut it to the exact size of your template’s circumference, and lay it on top of your printed template.

Imagine that this round piece of parchment paper is the top surface of your cake. You can now start piping and tracing the letters from the template. Try to trace the letters and the spacing between them as accurately as you can.

4. Experiment with Different-Sized Piping Tips

Don’t expect your first round of piping to be perfect right away. Experiment with various sizes of piping tips until you find the one with the right thickness. The right-sized piping tip will make spacing your letters a lot easier. And also it’s easier to control and would probably just leave a small mess in case you wrote unnecessary writing.

When you find the perfect-sized piping tip to use, do some more practicing with it in order to find the best techniques (such as correct angle, pressure, and flow) and to build your confidence.

5. Experiment with Different Kinds of Icing

You might have found the perfect piping tip, but you also need to take into consideration the kind of icing you will be using for your cake writing. Remember that texture and flow matter, too.

There are several types of icing you can experiment on — buttercream , royal icing, melted chocolate, and gels. Find out the best one that suits your purpose, as well as your skillset.

How to Write on a Cake with Less Hassle

After doing a lot of practicing, you are now ready to do some actual piping on that cake. Follow these tips on how to write on a cake with less hassle.

  • As we’ve previously advised, it’s best to start with a cursive font as an amateur cake decorator. Cursive fonts are more manageable in terms of flow and stop control.
  • If you’re working with a buttercream-finished cake, make sure to chill it first before doing any writing. Doing so will allow you to scrape off your mistakes without compromising the cake’s surface.
  • Another tip: If you haven’t decorated the cake yet, it would be best to start with your writing first, then add the other decorative elements later. This way, you’ll have more room to do your piping without having to worry about messing up the other decorations.
  • Did you decide on doing your writing freehand? If so, it would still be good to use your printed template as a reference. It will give you a better idea of how to center your letters. Counting the letters for each line will help a lot.
  • If you’re a bit of a control freak, transferring the image of your letters onto the cake so you can trace them can give you better control.

3 Techniques to Write on a Cake

Here are several techniques for transferring an image onto your cake that you can explore:

1. The Toothpick Method

Cut a piece of parchment paper to the exact size of your cake surface. You can trace the letters lightly from your printed template onto the parchment paper for reference.

After you’re done, lay the parchment paper with the outline on top of your cake. Using a toothpick poke an outline of the letters through the parchment paper onto the cake’s surface.

Remove the parchment and follow the visible outline of the letters made by the poked holes. Use the outline as your guide when you pipe.

2. The Reverse Method

Pipe your letters backward on a piece of parchment paper then flip over and press lightly on the cake’s surface to create a template. Just press enough so that you will have a semblance of a guide to work with and pipe over completely.

Whichever method you prefer and choose, remember to pace yourself when you start piping. Always keep your bag at a 45-degree angle and avoid dragging the tip through the icing.

Round tips are the best for cake writing but avoid very small ones as they make squeezing difficult and might cause your piping bag to rupture. For easier handling, do not overload your piping bag with too much icing.

Mistakes can still occur but you can correct them by doing embellishments to cover up your errors. Squiggle, swirl, or do some other decorative maneuvering if you have to.

How to Write on a Cake: Final Tips and Tricks

If you’re still not confident about executing what you’ve practiced flawlessly, there are other effective alternatives that will help you achieve equally satisfying results.

1. Create a Plaque out of Gum Paste or Fondant and Do Your Cake Writing on It

This will spare you from the nerve-wracking task of writing directly on the cake. It will also be easier to wipe off the letters in case you make a mistake and need to start over.

Once you’re satisfied with your lettering, you can position the plaque on top of the cake along with the other decorative elements.

2. Use Fondant to Cut Out Letters

Here’s another idea — using a stencil, a pizza cutter, or a knife (for smaller areas), cut out letters from fondant . Smooth rough edges with your finger. Lay your fondant letters on a baking sheet until you’ve completed cutting all letters and you’re ready to set them on the top of your cake.

3. Use Letter-Shaped Fondant Molds to Make Your Letters

Instead of cutting fondant into letter shapes, you can also use fondant molds to form your letters.

Roll out a piece of fondant on a clean, flat surface. The fondant should be about the same thickness as the cavity in your letter-shaped mold.

Press the fondant firmly into the mold and work your way into filling the cavity and forming the letter you’re shaping. After you’re done, trim off the excess fondant using your finger and a spatula.

To remove your letters from the mold, turn your fondant mold and flex it until your fondant letters fall off the cavity.

How to Write on a Cake

One of the most difficult skills to learn in cake decorating is how to write on a cake. It is easy to ruin a gorgeous cake or cupcakes with sloppy or badly aligned letters. In order to become a competent cake writer, you must mimic the lessons you did as a child when learning to write your ABCs. Trace letters with a full piping bag again and again on parchment taped over different alphabet primers. This will help you gauge the correct flow, pressure, and angle needed for perfectly formed letters.

Learning to Write on a Cake

A person who has lovely handwriting is not guaranteed a similarly attractive piped icing look so it is imperative to practice, practice and more practice until your lettering is consistently perfect. You might find that certain alphabet styles work better for you so try many “fonts” to pinpoint your best-looking letters. After you master that style of writing you can branch off into other styles of writing. Different icing types can also affect your skill at piping letters because you could get better results depending on the texture and flow of icing. Write with melted chocolate, buttercream, royal icing, and gels to discover what you like best.

One foolproof method of putting messages on cakes without risking your perfectly iced surface is to make a plaque out of gum paste , pastillage or fondant and simply write on that instead of directly on the cake. If you make a mistake you can wipe off or scrape off the letters and start over. When the letters are perfect you place the plaque on the cake and decorate around it with the rest of your design.

If you simply cannot get the writing to look good enough and your time is limited you can always use cut out letters from rolled fondant or candy molds filled with pressed fondant in letter shapes to spell out your message.

Tips for Writing on Cakes or Cupcakes

  • If you are a beginner cake decorator try writing your message in cursive fonts because it can be very difficult to control the flow and stop of icing cleanly in block letters. Cursive writing fits in well with elegant or whimsical cakes especially if your printed alphabet is shaky.
  • If your cake is finished in buttercream always refrigerate the cake first before writing on it because if the cake is chilled you can easily scrape off any errors without completely wrecking the surface of the cake. Make sure you do not write on your buttercream finished cake with royal icing because the fat in the buttercream will break the royal icing down.
  • Take the time to cut out a piece of parchment exactly the size of your cake surface and plan out what you wish to write on the paper. This ensures there is enough space and you can line up the letters evenly. Lay the paper on top of your chilled cake and prick out the letters through the paper with a toothpick. Then remove the paper and pipe the message using the now visible letters on the cake. If the pricked out letter outlines fail to produce the flawless results required, you can always buy a writing imprinter to help line everything up.
  • Remember you do not have to get the whole message on one line across the cake. You can put “Happy Birthday” above the name of the person. Start the lettering in the middle of the word in the middle of the line you want to pipe on. For example, if you are piping freehand do the “B” in birthday and then add the other letters one after the other around it taking care to leave the space in between the “Y” in happy and the “B.”
  • Always do the written portion of your cake design before adding the rest of your decorations in order to leave enough room for the message. It is very easy to get excited about your flowers or other design elements and get carried away when placing them on the cake. Remember it is always easier to add than take away!
  • Pipe your letters as slow as is required by your skill level and the type of writing you are putting on the cake. Keep the bag at a 45-degree angle and do not drag the tip through the icing. Take your time and if you do make an error try embellishing the letter with squiggles, dots or swirls to camouflage the mistake.
  • You can use any tip for writing but the best decorator tips to use are round tips. These tips could include: 1, 2, 3, 4, 5, 6, 7, 8, 9, 10, 11, 12, 260, 800, 801, 802, 803, 804, 805, 806, 807, 808, and 809. Keep in mind that the very small tips are difficult to squeeze stiff icing through and you might rupture the bag trying to write with them. Also, do not load too much icing into the bag or it is hard to handle.

An Easy Way to Write on Cake 

Piping a name or message on a cake is a fun way to personalize a celebratory dessert—but it can be an intimidating prospect, even for seasoned bakers. Nothing mars a perfect ice cream cake or sugar cookie like a misspelled name, a smudged word, or crooked lines, and it’s not exactly easy to erase mistakes made in frosting. 

Luckily, there’s a workaround for the piping-cautious: using melted chocolate instead. Chocolate can be piped onto parchment paper and then transferred to the cake once it’s hardened—which means you have as many tries as you need to get your piping just right.

How to Write on Cake

1.  With printer, print desired message on sheet of paper. Simple, blocky fonts are easiest to transfer without breakage. 

2.  Place printed message in baking sheet and cover with parchment paper. 

3.  Melt 1 ounce chocolate (any type) in microwave. To tint chocolate, stir food coloring into melted white chocolate. 

4. Add melted chocolate to parchment cone, filling just one-third full to avoid risk of chocolate oozing from top. 

5. Practice writing on edge of parchment to get a feel for how fast chocolate comes out of cone; cut wider opening if necessary. 

6. Trace over letters with melted chocolate and transfer baking sheet to refrigerator. 

7. When chocolate sets, use offset spatula to transfer letters to cake. 

How to Make a Homemade Parchment Piping Cone

The stiff opening of a parchment cone works better for delicate lettering than a pastry bag or zipper-lock bag. Here’s how to make one.

1. Fold 12-inch square of parchment paper in half on diagonal. Using knife, cut in half on fold into 2 triangles.

2.  With long side of triangle facing you, fold bottom right‑hand point up and under, giving it a half twist until it meets triangle’s top point.

3. Holding those points together, wrap left-hand point around outside of cone until all 3 points are perfectly aligned. Tape or staple points together.

4. Use scissors to snip very small hole in point of cone.

At some point in your cake decorating hobby (or business, if you should decide to start a cake decorating business, that is), you’re going to be asked to put a name or message on a cake.

I addressed this briefly in the post “Piping a Message Onto a Cake” which you can read here , but it looks like a few more hints are in order!

In that post I just mentioned, I had explained that you DO NOT have to have the handwriting of an expert calligrapher. BUT, you do need to practice.

But for starters… 

Here is a common question about writing on cakes: “How do I know how much room I need to write and/or center the name/message?”

The simplest way to determine this is to choose your CENTER point of the SPACE you have in which to write. THEN count the number of letters in the name or message – and divide by 2 (kind of like backspacing 1 time for every 2 letters). You now know how many letter spaces you need on either side of your center point.

For example, the word “decorate” has 8 letters. Divide 8 by 2, and your answer is 4. You should give enough room for 4 letters to the LEFT of the center point, and 4 letters to the RIGHT of the center point. <b><i>Click on the picture above to get a larger illustration of this. </b></i>

Here’s another GREAT tip to make it easier for you to get started writing on cakes…

Here are a few more tips to make the process easier:

2) A SMALLER bag is a little easier to handle than a larger bag – so start small, so that you can keep your  hands close to your work. Don’t forget to review how to fill a piping bag/pastry bag here before you begin if this is the first time you’re trying this.

3) To keep your hands from shaking , tuck the elbow of your writing hand close to your body, and steady the bag with your “guiding” (i.e. non-writing) hand.

5) Practice on Your Homemade Practice Board! What does it take to make a practice board? Just a cardboard cake board or pan covered w/ plastic wrap so you can reuse it! (See the Crumb Boss video below!)

6) Use a Fondant “Banner!” Cut a piece of rolled fondant into a shape (such as a heart, or other shape), pipe your message on the fondant, let it set overnight in the refrigerator, and then apply the cutout to the top of the Buttercream.

4 Ways to Write on Cakes

In this video I’m going to show you 4 ways to write on cakes, to personalize them with messages and I’m going to use some fun Valentines Day puns for these examples!

For the first two techniques I’ll use my 4 Minute Buttercream and a piping bag. You can use any kind of frosting for this like whipped cream or ganache or meringue buttercream. I use gel colours because they’re very concentrated so they’re great for bright and bold colours.

#1 Piping: Handwriting

Any small round piping tip will work for this first technique - this is a #8. You can free-hand your letters onto your cake but I like to find a font I like, to mimic, which you can do on google images and save it to your phone to refer to, or search for a font generator and type in your word or sentence and then choose a font. You can save it on your phone or print it - whichever is easiest for you.

Before I write on a cake I write my word on paper so I can see what the size and spacing looks like on the cake. This is perfect and now I know that if I pipe the letters this size, they’ll fit onto the cake because they did when I wrote them that size on a piece of paper.

Having your cake on a turntable is really helpful for writing because you can quickly and easily spin the cake so that you’re piping each line of each letter at the angle that’s most comfortable for you, and that way your lines will be straighter and neater. If you don’t like a line you can scrape it off with an offset spatula. This is easiest if the frosting on the cake has set, so it’s firm and won’t get damaged but the pressure of your offset spatula.

You can use a toothpick to adjust the shape of a line if you want it to be longer or shorter or straighter, like this.

For the rest of the words I’m referring to the sentence I typed out in a cursive font earlier, simplifying it because my cursive is terrible! You don’t have to have neat handwriting on paper to be able to write neatly on cakes - they’re totally different skills and practicing on cakes will make your writing neat even if your normal handwriting is sloppy. (Although I should mention that writing like this on the top of a cake is MUCH easier than writing on the side of a cake!)

My writing is aligned to the right of the cake because I’m going to add a decoration on the left, and voila! A neat, legible message that’s quick to write AND delicious to eat!

#2 Piping: Pointillist

If you’re not confident about writing letters, try this next technique instead. Start by outlining your letters, and capital letters will be the most legible for this. You don’t have to outline the entire letter, just the first line of each letter will help guide you as I pipe, and these lines will help you keep each letter the same height and also make sure the words are straight on the cake.

Now use a piping bag with a small round tip like this #3 to squeeze out dots all along the lines of the letters, free handing the lines that you didn’t outline with the toothpick. The closer together you pipe the dots, the neater the letters will be.

Try to hold your piping bag at the same angle as you pipe so that the tips of the dots all point in the same direction. If you have a long message like this, you’ll need to squeeze and release the piping bag hundreds of times as you pipe the dots and it will get tiring so here are three tips to make it easier: First, make sure your buttercream isn’t too stiff because you’ll have to squeeze the bag much harder than if the buttercream is a bit runnier, by adding a bit more milk to it. Second, twist the top of the piping bag to push the buttercream down into the bottom of the bag and that way, you won’t need to push as hard to pipe it through the tip.

Third, take breaks when you get tired! It’s fine for some of the dots to set before you pipe the rest - it doesn’t all have to be done at once.

This is a great technique if you have quite a lot of space for your message, so you can pipe large capital letters, which are the easiest to read.

#3 Imprinted & Painted Lettering

For this next technique you’ll need a letter set. This is made by Sweet Stamp and you can use my code BGB10 for a discount! Wrap your finger in tape with the sticky side facing outwards and press it into the letters you want to pick up.

Press each letter into your cake. The best time to do this with buttercream is after chilling the cake for a few hours in the fridge so the frosting is very firm, but then leave the cake at room temperature for an hour so that the frosting is still firm but not cold. This will give you the neatest outline of the letters.

Use edible paint to colour the letters or you can mix luster dust with vodka or any other clear alcohol or flavour extract, to make your own edible paint. Use the thinnest paintbrush you have for the neatest painting, and if you accidentally paint outside the lines of a letter you can use a clean paintbrush dipped in water or vodka to brush over that smudge.

You’ll probably need to paint on two layers to get a really bold, metallic colour. This is the easiest way to get perfect fonts on the top or the sides of a cake.

#4 Chocolate Letter Mold

For a cheaper option than buying letter sets, melt chocolate chips or colourful candy melts and drizzle the melted chocolate into a letter molds, making sure you fill in all the letters you need for your message. Nudge the chocolate into the letters with a spoon to make sure the chocolate goes all the way down to the bottom of the letters, to prevent air pockets.

Scrape off the extra chocolate with an offset spatula so that there isn’t any extra chocolate stuck to the outline of the letters.

Put the mold in the freezer for 10 minutes or the fridge for 30 minutes and then push the letters out, pulling the mold away from each side of a letter and pushing up with your fingers from underneath the mold. Your hands will get covered in chocolate so if you want to keep them clean, wear gloves for this! I suggest placing them on a piece of parchment paper so that they don’t stick to table or wherever you put them.

Straight afdter frosting your cake, while the frosting is still soft and sticky, pick up the chocolate letters and push them into the frosting and they’ll attach easily. If you miss a letter just re-melt the chocolate, spoon it into the mold, chill it and pop that letter out!

Our Best Tips for Writing on Cakes

A home-baked cake is always well received, and personalizing the dessert makes it even more special. Follow these tips to help you write “Happy Birthday,” names, or any sentiment you like on top of your cake – so it doesn’t end up on CakeWrecks!

First let’s consider what you will use. Smooth, soft frosting in a contrasting color works perfectly for writing on cakes. If your cake is frosted in white, you can set aside a small amount and tint to a desirable color. Melted chocolate is also a good choice, as long as it has cooled enough to be slightly thick and not too runny, or else it will flow too quickly through your decorating tip or parchment cone. (Parchment cones are our tool of choice when using chocolate for easy clean-up. As always, fill cone half to two-thirds of the way and snip a very small hole in the tip. You can always enlarge the hole if needed). Regular whipped cream can be used on dark-colored cakes.

Practice definitely makes perfect with cake decorating. You can use a bit of the frosting you set aside or even vegetable shortening that has been stirred with a wooden spoon to soften. Place the cake pan that you used to bake your cake upside down on your work surface (after you have removed the cake, of course) and practice appropriately sized lettering and words right on the pan, scrape it up and do it again. Make sure you are well above your writing surface and try moving your whole body, not just your wrist and arm.

If you need more help, you can look up font styles on the Internet or in books and photocopy them, making them larger or smaller as needed – block-style, script, bold or delicate, you can find what you like. Then, place a piece of parchment over the page with the letters and trace with your frosting on the parchment.

The most common mistake when writing on cakes is making the letters too large or starting too far into the center and running out of room, so pace yourself. Make sure to ease up on the pressure applied to the pastry bag or cone when you come to a place in that particular letter where you might be going over a section twice (like in a cursive b, for example). We double up a lot with regular handwriting, but with cake writing, it yields a thick, ungainly looking letter.  Even if your writing comes out a bit wobbly, there is still much charm in a homemade cake. Serve it with grace; your guests will love it.

How to write on Cakes? Sharing with you all certain tips and tricks that would help you to master the art of writing on cakes...Have you ever wondered what to write on birthday cake, how to write on cakes, write name on birthday cake beautifully? Then look no further you are at the right place.. 😀

How to write on cakes - Getting that cold feed?? Do not worry its pretty simple to crack it..

So sometime back I had posted the picture of this beautiful cake on my Instagram and Facebook page and asked you guys whether you would like to have a video tutorial on How to Write on Cakes?

With the overwhelming response that I got on the post, I had to make a video tutorial on this topic for you guys..

I know, I am super late at posting this but at least better late than never right.

Hoping that some of you might find these tips and tricks on how to write on cakes useful and informative.

However, just by going through these tips you won't be able to crack the art in just one go I recommend you guys practise a lot, literally like a lot.

Cake writing is an art. Just like painting a picture or dancing to the beats, writing your name on cake is something that you need to develop with practise.

Let's quickly look into the cake decorating writing tips aka tips and tricks on how to write on cakes making your life easier.. ;

Use smaller size cone. You can definitely use any kind of piping bag or parchment cones to write on a cake. But I find that using a smaller sized parchment cone gives you much better grip. Check out the video recipe to see exactly how I make my cone.

Using Melted Chocolate to write on a cake.

Now that we have a cone ready; we would definitely need a medium with which we would write.

There are three options for the same: 1. Melted Chocolate 2. Buttercream 3. Ganache

But let's be honest we as home bakers would not be having buttercream or ganache at all times in our home. Whereas chocolate is something that is easily available and readily can be melted and used as compared to another medium.

One of the major reason why I recommend using Chocolate is that it is not viscous in nature. The fluidity helps it to flow easily; thereby making it easier for us to guide the direction of the flow.

However, buttercream and ganache being thicker it is not easy to write with it.

Cut your parchment paper cone to right size and The right way of holding the cone.

It is very important to get a consistent thickness all around while writing. For that you will have to try and test the thickness of the chocolate by cutting your parchement cone. Refer the video for the correct thickness.

And also for the right way of holding the cone.

Cake writing Fonts - Making your fonts look more stylish and appealing.

A simple trick can make your writing really stand out. And that is to write you first alphabet of the work for eg. H for Happy, B for Birthday or A for Anniversary stand out.

You can do that by writing the alphabets little bigger and prominent as compared to rest of the letters in that word.

Also try to give it a little stylish look by writing differently.

Draw an imaginary line

This brings us to our next tip on how to write the other alphabets on the cake.

Once you have written the first alphabet; make an imaginary line starting at the centre of the first alphabet and write the remaining alphabets to that height (Refer video)

This would give a professional look to your cakes.

Use of fonts

You can either write it like a print - HAPPY or script it in more casual way like - happy (in cursive font)

But my tip for you would be to make a combination of both (Refer video)

The casual looks give it a friendly vibe and make oneself connected to the cake even without knowing it.

Advantages of using Chocolate over Buttercream or Ganache

For example like in the above case I do not like the way j in Harjaap has turned out to be. So once the chocolate is set or cooled completely; I can easily remove the alphabet by using a knife and re write the way I want.

Cool right!!

One more advantage is the ease of storage. In case you did not use up all the melted chocolate in one go.. No worries spread it onto a parchment paper and allow it to try once it dries out you can take it off easily and store in an air tight container for next time.

Like I said even earlier just by reading these you would not be able to master it. One must practise a lot and when you practise; use both a 6 inch and an 10 inch cake tin as reference so that you get an idea on how to write on cakes either small or big.

When doing writing with the chocolate do you write out your message on parchment paper first and let it dry and cool completely and then place it on the cake or do you write directly on the cake with the chocolate?

Hi Teresa.. If you use buttercream or ganache to write on cakes then definitely you can use piping bag but for chocolates I won't recommend

Hello, I was wondering what chocolate do you recommend using specifically? Can I use chocolate chips? I've tried this before and it only worked out when I added some form of fat and liquid, but the chocolate did not settle well afterwards. Thank you so much for your time!

Hi Angela.. I recommend using Compound Chocolate. Chocolate chips won't work as they do not melt easily.

The easiest way to write beautifully and decoratively on a cake is with a piping bag. But what happens when you don’t have one? Don’t panic. With a pair of scissors and a plastic bag, you can create a DIY piping bag to write on your cake.

Hey, there! My name is Michelle, and I love cakes! Whether I’m eating, baking, or just looking at a cake, I enjoy every second of it. That said, I have spent many years writing on cakes with and without piping bags. Needless to say, I consider myself an expert in this field.

Piping bags are going to make your life infinitely easier, especially if you write on cakes often. In the meantime, you can do without. There are numerous ways to write/decorate a cake without a piping bag, and this article will teach you how.

Who’s ready to decorate their cake with some charming words?

Plastic Bag

Parchment paper, candy letters, wax paper stencils, squeeze bottle, cutouts and toothpicks, how can i decorate a cake without a piping bag and nozzle, how do you decorate a cake with a piping bag, how do you make a piping nozzle at home, what is a frosting bag called, what can i write on a cake instead of happy birthday, final words.

Before we dive into how to write on a cake without a piping bag, consider buying a piping bag with accessories to help you through future cake writing endeavors. Seriously, these kits are super affordable and much easier to work with. 

For now, feel free to try out one of these piping bag alternatives.

The absolute best and most popular substitute for piping bags is a simple plastic sandwich bag. They mimic actual piping bags, so it’s no wonder why they’re used so often as a replacement. Not only that, but most people carry these bags in their homes, making them a viable pick.

All you have to do is place the frosting into the bag and push it to a single corner. Then, twist the top of the bag, so it is secured. While holding the twisted end, use a pair of scissors to cut off the corner. If you need to, you can always make the hole bigger, so start small.

You can also cut in different ways to create designs, just like a professional piping kit offers. If you have metal pipers on hand, you can use these, too.

No plastic bags? No problem. Parchment paper to the rescue. (You can also opt for wax paper if that’s all you have). To use parchment paper, do the following:

  • Fold parchment paper into a triangle
  • Roll it into a cone shape and tape securely
  • Add the frosting
  • Add a metal tip, if using
  • Fold the top of the parchment paper bag down and start writing.

The good thing about using parchment paper is it is super glossy, just like plastic bags and regular piping bags. Therefore, the frosting will be able to slide out with ease. Yes, it requires a bit more work, but when you’re in a pinch, it definitely works!

Trying to create a makeshift piping bag can be a bit of a hassle, I get it. If you want to ditch the actual “writing” yet still create “words,” you can also opt for candy letters instead! These are super easy to use, especially if you don’t consider yourself super “artistic” or creative.

Another great option using candy is to simply spell out the words using candy. For example, a super sweet cake could have words spelled with adorable gummy bears , while a decadent chocolate cake can benefit from delicious mini M&Ms .

Are you feeling super crafty? If you have wax paper on hand, you can create your own stencils! This is a wonderful choice if you’re looking for something that looks like it is engrained on the cake rather than sticking out (which is the case for frosting and candies).

Making a wax paper stencil is easy. Just do the following:

  • Write the message (larger letters will work better)
  • Cut out the letters carefully
  • Place the words on your cake
  • Fill in the letters using sprinkles, powdered sugar, or another similar alternative.
  • Remove and enjoy!

Step up to the plate, and squeeze bottles. You are no longer reserved for ketchup and mustard! Did you know that you can use a squeeze bottle to write on your cake? It’s super easy and produces excellent results.

The biggest problem with squeeze bottles is the tips might be a bit small. That is why it’s recommended to use thin frosting or melted chocolate with this method. Of course, you can always cut off a bit of the tip to make it larger for piping.

If you don’t have any other option, you can always skip writing directly on the cake and opt for a printed message instead. Create your own banner using Word or another similar application. Then, print it out. Use toothpicks to hold the message into the cake. 

It’s not exactly the best way to go about things, but it works when you don’t have any other options. Plus, you won’t have to worry about messing up any of the letters. This is a major benefit!

There are plenty of ways to write on a cake without a piping bag, and now you know all of them. But if you still have some prying questions about how to write on a cake without a piping bag, keep reading these questions and answers below.

There are so many options! You can create a DIY piping bag with one of the methods above. Cover the cake in candies and sprinkles. You can even add items that aren’t edible but on the theme. For example, add some nautical toys to a sea-themed cake.

There are many great ways to decorate a cake with a piping bag. For one, you can write a message or someone’s name. You can also do some fancy detailing , such as petals and flowers, that looks way more difficult than they really are.

With a pair of scissors and some soda cans, you can make your very own piping nozzles at home. To do this, cut the top off the soda, wash, and dry. Cut the bottom into a rectangle. Roll the right corner and tape. Cut the tip into desired shapes and trim sharp edges. Viola! 

A frosting bag is the same thing as a piping bag. It can also be referred to as a pastry bag.  

There are plenty of choices, including: “Congrats on making it another year,” “Happy Birthday, I love you,” “Enjoy your day Big Boy/Girl, Happy Birthday,” or “Happy Birthday to the best apple on the family tree.”

Writing on a cake can change the entire look of the cake, and in a good way, too. But you don’t need a piping bag to do it. You can create a DIY piping bag using a plastic bag or parchment. Or, ditch the bags and use candy letters, wax paper stencils, squeeze bottles or cutouts.

Calling all creatives! Do you love to bake, and you’re looking for easy ways to jazz up the presentation of your work? Or maybe you’ve never been one to spend time in the kitchen, but it’s time to delve into a new hobby? Decorating cake is an art form and it can be a great creative avenue even for those who aren’t big on baking.

As a self-taught baker and cake decorator, I’m blessed to be able to do something I love for a living. Over the past 17 years since I first started teaching myself to decorate as a pre-teen, I’ve compiled many tried-and-true tricks to making beautiful cakes.

We’re going to go over some basic steps for crumb coating and base icing your cake, and then 5 easy beginner techniques (that don’t look beginner!) to make your cake look professional.

Cake Decorating: What You Need To Get Started

Here’s everything you need in your cake decorating toolkit!

Cake Decorating Supplies

  • Cake boards
  • Cake turntable (for a set, try this )
  • Cake leveler (or a serrated knife)
  • Piping bags
  • Gel or paste food colouring
  • Spatulas in a variety of sizes 
  • A bench scraper
  • Your favourite buttercream recipe (my favourite is a vanilla buttercream from Sugar & Sparrow )
  • Decorating tips & couplers (To get started, you’ll want a few sizes of round tips, star tips)
  • You may also need scissors, a small spoon, parchment paper, paper towels, and some small rubber bands.

Starting Techniques

Before you actually start decorating a cake, you can practice on a cookie sheet lined with parchment or wax paper. This way, you can scrape off the buttercream, refill your bag, and start again–without the pressure of messing up a whole cake!

Here are a few useful techniques you’ll want to get comfortable with!

How to create Shell/Beaded Border with icing

To get started, fit a piping bag with a small coupler and a star tip, and fill with any colour frosting. Holding the decorating bag at a 45º angle to the surface, squeeze the bag to create a rounded shell. Quickly loosen the pressure and lightly move the tip downwards to finish off each shell. Repeat to create a line of shells. The tip used here is a Wilton #20.

The same motion can be used with a round tip to create a beaded border. For a beaded border, use the decorating tip to swipe down on each dot as you move to the right. This beaded border was made using a Wilton #8.

Writing on Cakes with Icing

You can also practice writing on parchment paper! Practice freehand, or print out a phrase in a fun font, and place it under your parchment to trace it. This helps develop even letters. A trick of the trade is to pipe lines slightly above the surface on which you’re writing. As you let go of the pressure, gently attach the line to the surface. You will notice less shakiness is visible this way!

Experiment with thinner tips like #1 or #2, medium like #3, and thicker tips like #4 and #5. Pipe with confidence…adding flourishes and curlicues helps distract from imperfections!

Making Rosettes with Icing

For the rosette, use a star tip like 1M (or any medium-to-large star tip–many cupcake piping tips look beautiful with this technique, and each one will give a slightly different look.

Experiment to find your favoyrite!) In a very slow circular motion, spiral outwards and finish off in a circle.

Making Swirls with Icing

A swirl begins just like a rosette, however instead of finishing off, keep piping in an upward spiral, making the circle smaller as you go. Swirls look beautiful in any large star tip or even a French pastry tip.

How To: Frosting Your Cake for Beginners

The first step to frosting your cake is to stack, fill, and crumb coat. The crumb coat is a technique of using a thin, messy layer of frosting to lock in all the ugly crumbs. The cake is chilled like this so that it hardens, making it easier to frost the pretty outside layer. If you’ve ever spread frosting over a cake and found it full of crumbs, you know how difficult it is to get the crumbs out once they’re there!

Start by leveling your cake layers. You can use a cake leveler, available at craft stores. A serrated knife works well too.

After leveling, I wrap my cake layers and freeze for anywhere from about twenty minutes to several days. I like to work with cake that’s already frozen. It helps keep those crumbs from coming off, and every little bit helps!

To start off, spread a little bit (a tablespoon or two) of icing on your cake board and spread it thinly to glue your first cake layer to your board.

With your piping bag, outline a circle around the edge of your first cake layer.

We call this the dam. If you want to fill your cake, you can add jam, lemon curd, custard, or mousse to the middle. Otherwise, just fill it with frosting. Don’t overfill! Use your angled spatula to spread your filling evenly, and top with the second cake layer. Repeat the process until all your cake layers are stacked.

Next, prepare a large piping bag with any sort of large tip. I like to use my star tips as a one-size-fits-all tip, but you could also use an open coupler or a tip called a base icer – especially made for the base layer of frosting.

Pipe a layer of frosting all over the sides of your cake. For the top, you can simply plop a dollop of frosting.

Using your large spatula, employ a smoothing motion to spread this frosting along the sides and top. This can be imperfect, it’s simply to adhere the frosting to the sides of the cake.

Next, use your bench scraper to scrape the frosting thin against the sides while turning the turntable in a smooth motion.

And that’s it for the crumb coat! Chill your cake in the freezer for about twenty minutes.

Now it’s time for the base ice.

Cake Decorating How To: Base Ice

Refill the piping bag you used for the crumb coat with whatever color you want your base layer of frosting! Repeat the same process of piping buttercream all over the whole cake.

Smooth the frosting with your spatula. For the top, use a brushing motion to remove excess frosting on the edges, wiping your spatula after each swipe. Smooth the frosting evenly over the top, in as few motions as possible.

Now you’re going to take your new best friend, the bench scraper! Hold the bench scraper at a right angle to the cake, turning the turntable in one smooth motion with your non-dominant hand.

Clean the bench scraper, and repeat the same brushing motion on the top edges to remove any excess. Finally, smooth out the top surface with the bench scraper.

If there are any imperfections, you can fix them by freezing your cake for 10-15 more minutes, piping a little more frosting in the gaps, and smoothing out again using the bench scraper.

Putting It All Together

Now I’m going to show you a few techniques you can use to bring together all that you’ve learned!

How To Make a Semi-Naked Cake

If you’d like to make a semi-naked cake, stop after the crumb coat. All you need to add is some food-safe flowers, greenery, or berries. I used rosemary and blackberries. It’s much easier than you’d think to make beautiful naked cakes!

Cake Decorating: Textured Technique

This rustic technique is extremely popular for weddings!

Immediately after base icing your cake, use a spoon or a small spatula to press an indentation into your cake while spinning the turntable. Stop when you reach the top to clean the spoon/spatula. On the top of the cake, repeat the same technique in a spiral.

You can touch up the edges by running your spoon one more time over the top side at the corner if needed. This technique is perfect for beginners because the rustic, imperfect look is just what makes it so striking! You could use flowers, greenery, or berries (as with the naked cake) to top this cake, and it would be beautiful. I opted for some store-bought macarons and rosette swirls.

Cake Decorating How to: Petal cake

For this technique, crumb coat your cake, but stop before the base ice. Prep a piping bag in your base colour (I used white, but pink or mermaid colours also look beautiful with this technique!) with a coupler and a round tip. You could use any size from 8-10, or even an open coupler.

Pipe a column of dots up the side of the cake. After each row, using a small spatula or spoon, press down and swipe on each dot, cleaning after each swipe. Since I used a smaller size tip for the petal, I simply brushed the decorating tip sideways after each dot, as with the beaded border. 

Repeat all around the cake and on top!

Sprinkle Border and Swirls

This technique leaves so much room for creativity! The template is just a starting point as you can be creative by adding stripes, changing out the swirls for a rope or shell border, adding a drip, adding in the watercolour technique–pretty much whatever you can imagine!

After base icing the cake, chill in the freezer for about twenty minutes.

Place your sprinkles in a wide-mouthed bowl or on a sheet pan lined with parchment. When chilled, hold your cake in one hand, while your other hand scoops the sprinkles and presses them onto the bottom inch or so of the cake, creating a border. (I love the imperfect look of a jagged sprinkle border, but for a clean border you can also wrap a strip of parchment around the top of the cake where you want the sprinkle border to end.)

How to Write on Birthday Cake in Creative Way

Do you remember how you learned writing your ABCs as a child? Well, I guess we all know the struggle writing on the dotted dots. It’s the same with the cake writing. If you have ever seen someone writing on a cake, you must have noticed how precisely they do it without any mistake. If you are the one who has spent his life ordering birthday cake online or baking, decorating the cake, the last thing you want is to not ruin the writing part.

How To Write On Cake

To become a competent cake writer, you must imitate the lessons you learned as a child while learning to write your ABCs. Trace the letter repeatedly with a full piping bag on the parchment taped on various alphabet primers. This will help you measure the correct flow, pressure and angle required for fully formed letters.

We would go ahead and share some of the basic steps on how to write on the cake and also some expert tips. But first here are the tools and ingredients you need:-

• Piping Bag and Tips

• Small straight spatula

• Toothpicks

• Medium for writing ( chocolate, piping gel, buttercream, royal icing, or fondant)

1. Fill the fitted piping bag with a fine tip

Fit a piping bag with fine tip and fill it with room temperature melted chocolate, coloured frosting or piping gel. You can use any type of piping bag or parchment cone to write on the cake. But, using a smaller size parchment cone gives you a much better grip.

2. Mark each word with a toothpick

Using a toothpick, mark the beginning and end of each word in a straight line. This will help in keeping you focused when you start the pipe.

3. Trace Letters

Using the same toothpick, trace the letters in the frosting.

4. Use Melted Chocolate to Write on the cake

Now we have a cone ready; We will definitely need a medium with which we write. Chocolate is something that is readily available and can be easily melted and used, compared to other mediums.

A major reason to recommend chocolate is that it is not sticky in nature. Liquidity helps it flow easily which makes it easier for us to direct the flow.

5. Practice Piping on a plate first

Practice a few letters on a plate or other clean surface before you pipe directly onto the cake. In this way, you will become comfortable with the piping bag and will know how much pressure you require while writing.

A simple trick can really make your writing stand out. For example, write the first letter of each word. H for Happy, B for Birthday or A for Anniversary. You can write the letter slightly larger and prominent than the rest of the letters. Also, try to give it a slightly stylish look by writing differently.

Use your non-writing hand to stabilize the bag as you pipe over the letters you print. Once you have practised your font, it is time to write on the cake. Begin by imagining a cake cut into four pieces with straight, vertical and horizontal lines. If you need to center your letters, count the number of letters in your phrase, such as:

• Happy: 5 characters

• Birthday: 8 letters

This means that the first "P" in Happy is the center letter for that word and that the "T" and "H" divide the center in the birthday. When writing in print, it is best to center the letters first.

After that, start finishing the ends of the word starting from the top. (So ​​for "Happy," you would first write in the order "p, p, y".). Now it is time to write the letter which is going to the left of the center letter. (To end the word "Happy," you would write "A" then "H".).
